Physiology: Leaves of red spinach are usually round, thick, and rich reddish-green or reddish in color, and have a bright red-colored central stem. The leaves and stems of red spinach contain red pigments in their cells. This has a sweet, raw flavor and the texture is very delicate like that of green spinach.
Origin: Red spinach originates from tropical parts of America. This is usually consumed as a vegetable in many parts of India.

Ingredients
Red Spinach (1 bundle)
Mustard Oil 2 tbs
Fenugreek Seeds (1/4 tbs)
Garlic Cloves (5-6 cloves)
Turmeric (1 Pinch)
Salt (1 Pinch)
Red/ Green Chilly (1-2 in numbers)
Step By Step Preparation of Lal Saag
Step 1
Firstly, check all the ingredients for a tasty and healthy lal saag recipe. Clean the red spinach and cut them if they are too large in size.
Step 2
Take a cooker else cooking pan. I have used a cooker to save time. put it on the gas stove and switch on the burner. Let it heated for a few seconds. Add mustard oil as prescribed in the (ingredient's corner). let it heat for 10 seconds.
Step 3
Add the fenugreek seeds and red chili to it. Heat it till the fenugreek changes its color from yellow to dark brown. Now add crushed garlic and let it fry for few seconds to change its color.
Step 4
Now once it started to give a garlicky aroma, add the clean and fresh red spinach & a pinch of salt in it. Close the lid of the cooker. let it give 2-3 whistles. Do not add water to it. Now make it cool for some time.
Step 5
Now open the lid and check it get cooked. mix it well and if there is any amount of water. Put it on the stove and evaporate the water while stirring it in between 2- 3 minutes.
Step 6
Now, you can put it in a serving bowl and enjoy the healthier flavor of red spinach with plain rice or chapati. You will really feel the aroma of your mom's recipe.
