Ingredients of Authentic Litti Chokha Recipe
2 people to be served
For Litti Fillings
Mustard oil- 1
Lemon juice- 2 tbs
Carom seeds- 1/2 tbs
Chopped coriander leaves- 1/2 handful
Pickle masala- 1 tbs
Salt- According to taste
Nigella seeds-1/2 tbs
Grated ginger- 1/2 tbs
Chopped green chili- 1
For Dough of Litti
Whole wheat- 1 cup
Ghee- 1 tbs
Water as required
Salt- 1 pinch
For Chokha
- Eggplant/ brinjal 1 big
- Chopped garlic- 3 cloves
- Lemon juice- 2 tbs
- Black gram flour (sattu)- 1/2 cup
- Tomato- 1
- Green chili- 1
- Chopped coriander leaves- 2 tbs
Step By Step Method To Litti Chokha
Step1: Soft dough for litti
Step 2 Bihari style fillings
To prepare the filling of the Litti. Take a bowl and mix sattu (roasted black gram flour), pickle masala, lemon juice, kalonji, ginger, coriander leaves, green chilies, and salt mustard oil together. Now divide the dough into 6 equal parts, flatten to the desired size and place a spoonful of the fillings. Close the dough by the edges and roll it into a ball.
Step 3 Litti in cooker
Preheat the cooker for 5 minutes. Pour some ghee inside the cooker. This will help the littis to be roasted properly without getting stick to the floor of the cooker. Put these balls on a baking tray and bake them in the cooker for 15-20 minutes.
Close the lid of the cooker an let it cook for 5 minutes. Now open the lid and constantly, flip to the other side and bake till it cooked properly. Repeat the same as needed. Put the gas flame on a low medium to bake all the sides and get a crisp covering.
Step 4 Brinjal or aloo chokha recipe
Now to prepare the chokha, we have chosen brinjal as the ingredient. Wash, dry, and slit the brinjal. Properly check the brinjal for and deformity or insects inside.
Place the brinjal and tomatoes on top of the gas burner. Roast them at the highest temperature.
Once done, peel the brinjal and tomatoes and then mash them well. Transfer these into a bowl. Add garlic, salt mustard oil, lemon juice, green chillis, and finely chopped green coriander leaves in the bowl.
Similarly, we can prepare tomato chokha too. Mix the ingredients well and the chokha is ready to be served. Even, people in Bihar like to add red chilly powder to enhance the taste of baigan chokha recipe.
Step 5 Serve the Bihar ka swad
Keep the chokha in a serving bowl. Dip the litti balls in some melted ghee and serve them with the chokha. You can also serve this street food- litti chokha recipe with some kadhi or delicious & spicy sabzi/ curry.
