  • Black gram flour (sattu)- 1/2 cup
  • Tomato- 1
  • Green chili- 1

Step By Step Method To Litti Chokha

Step1: Soft dough for litti

Take a mixing bowl and add wheat flour, ghee, and a pinch of salt in it. Use some water and knead a soft dough. Keep it aside for 30 minutes and the dough is ready for the litti recipe. We always follow this trend of resting the dough to get the exact soft dough which will be easy to prepare the littis.

Step 2 Bihari style fillings

To prepare the filling of the Litti. Take a bowl and mix sattu (roasted black gram flour), pickle masala, lemon juice, kalonji, ginger, coriander leaves, green chilies, and salt mustard oil together. Now divide the dough into 6 equal parts, flatten to the desired size and place a spoonful of the fillings. Close the dough by the edges and roll it into a ball.

Step 3 Litti in cooker

Preheat the cooker for 5 minutes. Pour some ghee inside the cooker. This will help the littis to be roasted properly without getting stick to the floor of the cooker. Put these balls on a baking tray and bake them in the cooker for 15-20 minutes.

Close the lid of the cooker an let it cook for 5 minutes. Now open the lid and constantly, flip to the other side and bake till it cooked properly. Repeat the same as needed. Put the gas flame on a low medium to bake all the sides and get a crisp covering.

Step 4 Brinjal or aloo chokha recipe

Now to prepare the chokha, we have chosen brinjal as the ingredient. Wash, dry, and slit the brinjal. Properly check the brinjal for and deformity or insects inside.

Place the brinjal and tomatoes on top of the gas burner. Roast them at the highest temperature.

Once done, peel the brinjal and tomatoes and then mash them well. Transfer these into a bowl. Add garlic, salt mustard oil, lemon juice, green chillis, and finely chopped green coriander leaves in the bowl.

Similarly, we can prepare tomato chokha too. Mix the ingredients well and the chokha is ready to be served. Even, people in Bihar like to add red chilly powder to enhance the taste of baigan chokha recipe.

Step 5 Serve the Bihar ka swad

Keep the chokha in a serving bowl. Dip the litti balls in some melted ghee and serve them with the chokha. You can also serve this street food- litti chokha recipe with some kadhi or delicious & spicy sabzi/ curry. Enjoy the flavors of this authentic Bihari delicacy and do tell me the flavor and its taste.

In Bihar, we especially enjoy this authentic cuisine as get together party. Every member of the family gives a small contribution to the preparation of litti chokha. Some member help in dough making, some help in chokha preparation, and others help in roasting the littis on charcoal.

We really enjoy this traditional dish not only by having it but we Biharis feel it. Litti chokha teaches the families to unite. Children get the chance of greeting the whole family which is not present in the nuclear family.

So, I request you try this simple recipe with the family if you get the chance to get together or if you are organizing any family party.
