For a healthy life, we consume breakfast on a daily basis. And if a breakfast is tempting along with easily prepared, it would be heaven! Poha is one of the best breakfasts that includes healthy veggies and consume a few minutes to get ready.

Ingredients
Poha- 1 cup
Onion-1
Potato-1
Green beans-5 pieces
Carrot-1 small
Green peas-half cup
Tomato-half cup finely chopped
Curry leaves-7-8 leaves
Green chillies-3 finely chopped
Mustard seeds-half-tea spoon
Refined oil- 1 tablespoon
Turmeric-half teaspoon
Coriander powder-half teaspoon
Salt- according to taste
Sugar- half teaspoon
Water- to wash Poha
Preparation time- 10 mins
Method to prepare
* Take a bowl. Add Poha in it and wash it once. Keep it aside.
*Take a pan, add refined oil & let it heat for few minutes. Now add mustard seeds & let it splutter. Now add the curry leaves too.
* Now, add potato & carrot cut into small cubes. Let the potato & carrot fried until it gets cooked.
* Now add the green beans along with green peas and sprinkle the turmeric & coriander powder afterward.
* Add the chopped tomato and cover the lid of the pan.
*Now let the veggies get cooked. Apart from this, add salt and sugar to the washed poha. Along with some finely chopped onion & green chilies in it.
* Now, add the mixture to the cooked veggies and let it dry for one min and close the gas stove. Our tempting Poha is ready to serve.
*Serve the Poha after garnishing with roasted peanuts. Hmm, it's really yummy.
