Suran/ yam/ jimikand is rich in micronutrients such as calcium, omega-3 fatty acids, vitamin B6, copper, and other minerals. The yam also contains a molecular hormone i.e., diosgenin which has the power to fight cancerous tissue in the body.

The method used to cook this side- dish of suran is a rare delicacy. Though suran/ yam is considered a superfood, it does not appear in the day-to-day recipes as the tuber is rich in minerals which have given yum a property of itching. People cut the yum with proper care, by using mustard oil or wearing gloves in their hands.

If you really want to prepare deliciously yum curry then choose and dig out garden-fresh yum/ oal which has the soily aroma. It will be mouth-watering and tempting in a real manner.

This side dish is so yummy and delicious that we can serve it with plain rice or chapati too.

Note: We generally use lemon to prevent the mild, itchy feeling on the tongue that sometimes follows the consumption of this dish. But it is rare, not every single people feels the itchiness of yum after having it.


Ingredients

Elephant foot yam (suran, Oal, Jimikand, Yum), peeled and chopped into cubes- 1 big bowl 
Lemon- 1 small
Cumin seeds- 2 tsp 
Onion- 2 big
Tez Patta- 2 leaves
Cooking oil- 1/2 cup
Salt- According to taste
Turmeric Powder-1/2 tsp
Red Chili- 2 pieces
Coriander Powder- 1 & 1/2 tbs
Hing- 1 pinch
Garlic- 10-12 cloves
Cloves- 3 pieces
Green Cardamom- 3
Cinnamon Stick- 1 small
Ginger- 1/2 inch piece
Tomato- 1 big
Water- 2 cups

Method to prepare

Step1: Take suran/ yum/ jimikand as guided in the ingredients section. Do use gloves or massage oil in the hands before peeling and cutting the suran/ yum/ jimikand/ elephant foot/ oal into small pieces. 

Now, put a pan on stoves and add 1/4th cup of oil in it. Let the oil properly get heated. Now add cinnamon stick in it along with the pieces of suran/ yum/ oal into the pan. 

Switch the gas on a medium-low flame and let the suran/ yum/ oal to be fried until it becomes golden brown in the color.

Step2: Now add all the masala in a mixer/ grinder jar as guided in the ingredient section (except the Tez Patta) along with garlic, ginger, and tomato. Let it grind into a fine paste.

Step3: Take out the suran/ yum/ jimikand from the pan after it gets golden brown. Now add the rest 1/4th cup of oil into the pan. Now add the Tez Patta and cumin seeds into it. 

Once it changed its color, add the chopped onion into the pan. Let it cooked and turn its color into dark brown. Now add the paste of the combination of spices into it. Let it cooked properly unlit it leaves the oil at the side of the pan.

Step4: Add the fried suran/ yum/ elephant foot/ jimikand into it. Mix the spices with the yum properly. Now add salt as per the taste. Let it mix for two minutes. Now add water to it.

Let the yum cook for another five to seven minutes. Once the pieces of yum become mushy, switch off the gas stove. Add the lemon into it.

Suran Sabzi Served With Rice


Now serve it hot with plain rice or chapati as per your taste.
