Whenever we go home, we really enjoy mom’s special dish
gajar ka halwa. Even, though we are full of our appetite, our mom serves us her
delicious gajar ka halwa recipe from the corner of her kitchen’s full menu. I
remember, at my home, we all siblings really admired the taste of halwa and the
aroma which was really tempting and made us complete the full bowl of gajar
ka halwa in a minute. That delicious smell is always on my mind now. I
really miss those days and tried my best to recreate the taste of the same
gajar ka halwa as mom cooks it.
Gajar ka Halwa, also known as Carrot Halwa, is a popular Indian dessert made with grated carrots, milk, sugar, ghee (clarified butter), and a variety of nuts and spices. It is a rich and indulgent sweet treat that is enjoyed during festivals, special occasions, or as a comforting dessert after a meal.
Ingredients for gajar ka halwa
Carrots- 1 kg
Milk- 1 ltr
Sugar- ½ kg
Green Cardamom- 5 pieces
Dry fruits- your own choice
Ghee- 2 tbs
Fresh carrot |
Method to prepare gajar ka halwa
Step 1: Chop and grate all the carrots. Put a cooker on gas.
Add ghee to it and let it heat for 2 minutes.
Step 2: Now add the grated carrot into it. Let it properly
fry for about 5 to 10 minutes.
Step 3: Now add the milk to the cooker and slow the gas
flame. Let it cook until the carrot becomes mushy. We can smell the fragrance
of carrots dissolved in the cooked milk. It is amazing in its own way.
Step 4: Now add the dry fruits to a grinder and grate the dry
fruits along with the green cardamom for the recipe.
Step 5: Add the grated dry fruits and cardamom and sugar to the cooked
carrot. Now fry the carrot until it absorbs the milk properly.
Step 6: Lastly, serve the gajar ka halwa in a bowl.
