INGREDIENTS OF DAAL BAATI CHURMA (2 people)
For Dough/ Bati
semolina- 1/2 tbs
ghee- 1 tablespoon
salt- 1 pinch
Baking Soda- 1 pinch
wheat flour- 1 cup
For Daal
Toor daal- 1/4 cup
Urad daal- 4 tbs
Green moong daal- 1/4 cup
Chana daal- 1/4 cup
Coriander powder- 1/4 tbs
Lemon juice- 1/2 tbs
Salt- 2 pinches
Coriander leaves- 1/2 tbs
Ginger- 1/4 inch
Ghee- 1/2 tbs
Garam masala powder- 1/4 tbs
Red chili powder- 1/2 tbs
Turmeric- 1/8 tbs
Cumin seeds- 1/4 tbs
Mustard seeds- 1/4 tbs
Water- 2 cup
For Churma
Baatis- 4
Dryfruits- (Cashew, Almonds, raisins etc.)
Sugar/ Jaggery- 1 cup
Ghee- 1/2 cup
Method To Prepare
Preparing the Dough for The Baatis

To prepare the baatis, take a bowl and add wheat flour with semolina (Rawa) (quantity as guided in the ingredient section), baking soda, salt, and ghee. Using your hands, knead a really stiff dough with warm water. Shape the dough like a ping pong ball. Meanwhile, heat a cooker on the stove. Add little ghee to it and roast the dough balls on low heat a few times. confirm they're cooked well by analyzing its brown color and crusty cover. Then, break the basis from the top & pour some ghee in it.

Now, wash all the daals together. Add 1 cup water and turmeric as guided in the ingredients. Pressure cook the daals till 2 whistles. Allow the cooker to chill and take away the daal.
For temper the spices on daal. Mix all the spice powders in 1/2 cup of water to form a mushy paste. Put ghee inside a pan kept for heating on a medium flame. Now, add the cumin and coriander seeds. Once they splutter, add ginger. Then, add the paste of spice powders and fry for a moment, add the cooked daal. let it boil for 1 minute. Now it is ready to serve hot.

Take out the four baatis along with the choice of your own dry fruits (cashew, almonds, raisins, etc.) and crush it into the mixer/grinder. A mixture of churma is ready for further preparation. Now, take a pan and add ghee to it. Let it gets heated for a few minutes. Add the mixture of dry fruits, cardamom & baati i.e., churma in it. Let the mixture fried for five minutes on a low flame. Now, add sugar or jaggery to it and stir it properly. Now, switch off the stove and serve it with dal and baati in a serving bowl.
