Everyone becomes a cook this year. Yup, the pandemic has not only brought families together but also given us the concept of cooking and sharing delicious food together.  In our daily life, we really admire experimenting with different dishes & it really charges our mood if the dish like Dates and Cinnamon Cake Recipe is homemade baked. 

It would be a big surprise for our family members if we could serve them cake pieces as their tea-time snacks. In the period of lockdown due to COVID-19, what if we can try to soothe our taste buds through another type of cake i.e., dates & cinnamon cake. 

The dish is really very simple yet the sweet baking aroma will make you amazed to have it uncooked. We can even give a twist to the cake by adding a banana date cake with walnut & honey glaze then another twist could be gluten-free date cinnamon coconut cake; date and apple cake; cinnamon hazelnut date cake etc.

I’m always on a hunt for creative ways to use dates in sweets and confectionery cuisine. Dates are abundantly found in Middle East countries. Presently, I am residing in Muscat where I have seen the numerous dates trees growing here and there, I really like the local dates over here and replaced the use of sugar with dates in a maximum of my daily dishes. 

Hey, you are getting the feeling of mouthwatering! Even my family members can't resist their patience until they try the delicious & fluffy cake. Here is the cinnamon dates cake recipe eggless which makes you gulp the dish once it is getting ready!

Ingredients for dates and cinnamon cake

  • Wheat flour- 1 cup
  • Cinnamon powder- 4 teaspoon
  • Crushed Dates-1 & 1/2 cup
  • Coconut oil-2 tablespoon
  • Baking soda-1/4 teaspoon
  • Baking powder-1teaspoon
  • Salt-1/4 teaspoon
  • Strainer-1
  • Condensed milk or curd-1/2 cup
  • Water-1/2 cup
  • Vanilla essence-2 teaspoon


Method to prepare dates and cinnamon cake

Step1:

Preheat the pressure cooker for five minutes. We usually put salt in the cooker before baking anything but this time we need not add anything to bake the cake. Still, the result will be the same.  Let the lid be without the rubber wire along with the whistle.

Step2:

Take a baking tin & grease it with butter thoroughly in which you will bake the cake. Now add a little flour and tab it all around the baking tin so that the cake will easily de-mold after baking it. Now keep it aside. 

Step3:

Take a mixing bowl and add all the dry ingredients i.e., wheat flour, cinnamon powder, baking soda, and baking powder. Strain the dry ingredients twice to mix them thoroughly.

Step4:

Now take another mixing bowl & add water, condensed milk, coconut oil & crushed dates. Continuously stir the mixture & mix them well.

Step5:

Now add the mixed liquid to the dry ingredients & make a thick paste. The batter should be of pouring consistency.

Step6:

Now pour the mixture properly into the greased baking tin & place it in the preheated cooker. Before placing the baking tin, put a small bowl upside down in the cooker so that the baking tin doesn't come directly into contact with the cooker floor.

Step7:

Close the cooker by removing the rubber wire of the lid and the whistle. Let it bake for about 40 to 45 minutes until the top of the cake becomes golden brown in color. 

Step8:

After 45 minutes, prick the cake using a toothpick. If the toothpick comes without any sticky batter on it then the cake is ready else bake it for 15 minutes more.

Step9:

Now let the cooker cools down and de-mold the cake. Either you decorate it with whipped cream or serve it as it is. Our dates & cinnamon cake are ready for a bite.
